Roast Spiced Chicken (Ayam Panggang Pedis) Recipes

Ingredients :

2 tbsp margarine

2 cloves garlic, crushed

2 tbsp sweet soy sauce (kecap manis)

2 tbsp tamarind concentrate

2-3 tsp sambal ulek

1.5kg chicken, cleaned

wedges of lime to serve

Method :

Preheat oven to 200C. Heat margarine in a small saucepan. Add garlic and cook for 1-2 minutes. Add kecap manis, tamarind and sambal ulek. Bring to the boil. Remove from heat and brush over chicken. Place chicken on a rack over a baking tray. Cover lightly with foil and bake in preheated oven for 30 minutes. Remove foil, baste chicken and bake for a further 20-30 minutes or until cooked. Cut chicken into pieces and serve with lime wedges.
