Spicy Chicken Soup (Soto Ayam) Recipes

Ingredients :

1.5kg whole chicken

2 tsp salt

2 tbsp chicken stock powder

100g vermicelli noodles

1 tbsp peanut oil

2 cloves garlic, crushed

2 tsp root ginger, grated

1 stalk lemongrass, white part finely chopped and top part tied in a knot

1 tsp ground turmeric

2 tsp ground coriander

2 lime leaves, finely sliced

juice of 1 lime

wedges of lime to serve

 

Garnishes -

4 green shallots, sliced

1 cup bean sprouts, trimmed

2 hard boiled eggs, quartered

2 potatoes, cooked and sliced

Method :

Place chicken in a large saucepan. Cover with water, add salt and bring to the boil. Reduce heat, cover and simmer for 30-35 minutes or until chicken is cooked. Remove chicken and strain liquid, reserving 6 cups. Stir in chicken stock powder. Remove skin and bones from chicken and shred chicken. Cook noodles according to packet directions. Drain and set aside.

Heat oil in a large saucepan. Add garlic, ginger and lemongrass and cook for 1-2 minutes. Add turmeric and coriander and cook until aromatic. Add reserved stock, chicken and lime leaves. Simmer for 10 minutes. Add lime juice just before serving. Place noodles in serving bowls. Spoon chicken soup over noodles and top with garnishes. Serve with wedges of lime, sambal kecap or sambal cuka.
