Sweet and Sour Ginger Sambal (Sambal Jahe) Recipes

Ingredients :

4-5 small red chilies, seeded and chopped

2 shallots, or 1 small onion, chopped

2 clove garlic

1 piece fresh ginger, 2cm long, peeled

2 tbsp sugar

1/4 tsp salt

3 tbsp rice or white wine vinegar

Method :

Finely pound or grind the chilies and shallots or onion together using a pestle and mortar or food processor. Add the garlic, ginger, sugar and salt and continue to grind until smooth. Lastly add the vinegar, combine and pour into a screw top jar.

Sambals are a common sight at Indonesian and Malaysian tables. Their purpose is to perk up or cool down hot chili flavors. Sambals can also include simple components such as onion and cucumber.

Makes 90 ml
