Sweet and Sour Ginger Sambal (Sambal Jahe) Recipes
4-5 small red chilies, seeded and chopped
2 shallots, or 1 small onion, chopped
2 clove garlic
1 piece fresh ginger, 2cm long, peeled
2 tbsp sugar
1/4 tsp salt
3 tbsp rice or white wine vinegar
or grind the chilies and shallots or onion together using a pestle and
mortar or food processor. Add the garlic, ginger, sugar and salt and
continue to grind until smooth. Lastly add the vinegar, combine and pour
into a screw top jar.
Sambals are a
common sight at Indonesian and Malaysian tables. Their purpose is to
perk up or cool down hot chili flavors. Sambals can also include simple
components such as onion and cucumber.
