Sauteed Zucchini Recipes

Ingredients :

2-3 tablespoons

small to medium zucchini

olive oil or butter

clove garlic (optional)

salt and freshly ground black pepper

Method :

  1. Rinse and slice the zucchini into very thin slices or match-sticks.

  2. Heat the olive oil or butter in a large skillet over medium heat.

  3. Press the garlic, if using, through a garlic press directly into the pan.

  4. Add the sliced zucchini immediately.

  5. Stir until the zucchini is coated with the oil and leave to cook for 5-10 minutes, stirring occasionally.

  6. When the zucchini turns limp and tender, with a few browning edges, sprinkle with salt and pepper and serve.

Serves 4
