Zucchini Crepes with Ricotta Chive Filling Recipes

zucchini, grated
plain flour
eggs
freshly grated Parmesan cheese
skim milk
ground nutmeg
low-fat ricotta cheese
freshly squeezed lime juice
chopped chives
cracked black pepper |
Method :

Sprinkle zucchini with 1 tbsp salt and
let stand for 15 minutes.

Dry zucchini on paper towels.

Place the flour in a large bowl, make
a well in the centre, add the eggs, zucchini, Parmesan cheese, milk
and nutmeg, stir ingredients until mixture is smooth.

Heat a non-stick frying pan, pour 1/4
cup of zucchini mixture into pan and make a large crepe.

Cook 1 minute each side.

Repeat with remaining mixture.

Beat ricotta with lime juice, chives
and pepper.

Spread 2 tbsp of the mixture onto each
crepe, roll up and serve with a small salad.
