Zucchini Crepes with Ricotta Chive Filling Recipes

Ingredients :

zucchini, grated

plain flour

eggs

freshly grated Parmesan cheese

skim milk

ground nutmeg

low-fat ricotta cheese

freshly squeezed lime juice

chopped chives

cracked black pepper

Method :

  1. Sprinkle zucchini with 1 tbsp salt and let stand for 15 minutes.

  2. Dry zucchini on paper towels.

  3. Place the flour in a large bowl, make a well in the centre, add the eggs, zucchini, Parmesan cheese, milk and nutmeg, stir ingredients until mixture is smooth.

  4. Heat a non-stick frying pan, pour 1/4 cup of zucchini mixture into pan and make a large crepe.

  5. Cook 1 minute each side.

  6. Repeat with remaining mixture.

  7. Beat ricotta with lime juice, chives and pepper.

  8. Spread 2 tbsp of the mixture onto each crepe, roll up and serve with a small salad.

Serves 4
