Kidney Kebabs

Ingredients :

rashers streaky bacon

small cooking apples, peeled, cored and quartered

lamb's kidneys, peeled, halved and cored

pieces whole meal pitta

Method :
  1. Cut the rind form the bacon, halve each slice and 'stretch' it by scraping it firmly with the back of a knife.

  2. Wrap a piece of bacon around each quarter of apple.

  3. Thread kidney halves and the bacon and apple rolls on to 4 skewers, starting and ending with kidney.

  4. Grill the skewers under medium heat for about 5 minutes, turning them frequently.

  5. Serve each one in a piece of warmed pitta.
