olive oil
red wine
clove garlic, crushed
chopped fresh basil
chopped fresh oregano
red chilies, chopped
cherry tomatoes
button mushrooms |
Method :

Cook onions in boiling water until
just tender, drain, cool.

Cut eggplant and capsicum into
cubes, slice zucchini.

Combine oil, wine, garlic, basil,
oregano and chili in a large bowl, add vegetables, stand at least 1
hour.

Thread vegetables onto skewers.

Barbecue on each side until tender,
brushing occasionally with marinade.
