small eggplant

red capsicum

zucchini

olive oil

red wine

clove garlic, crushed

chopped fresh basil

chopped fresh oregano

red chilies, chopped

cherry tomatoes

button mushrooms

Method :
  1. Cook onions in boiling water until just tender, drain, cool.

  2. Cut eggplant and capsicum into cubes, slice zucchini.

  3. Combine oil, wine, garlic, basil, oregano and chili in a large bowl, add vegetables, stand at least 1 hour.

  4. Thread vegetables onto skewers.

  5. Barbecue on each side until tender, brushing occasionally with marinade.

Serves 8
