Tuna Sandwith with Bean Salad Recipes

Ingredients :

Sandwich Ingredients:

1 can white tuna in water

1/2 cup (125ml) onion, finely diced

1/2 cup (125ml) celery, finely diced

2 tbsp extra-virgin olive oil

4 leaves red leaf lettuce

1 ripe avocado

2 tbsp kefir

4 slices rye bread, toasted

pinch Herbamare

Salad Ingredients:

1 cup (250ml) yellow wax beans

1 cup (250ml) green wax beans

1 tbsp fresh pineapple juice

2 tbsp extra-virgin olive oil

1/2 tbsp nutritional yeast

1 tbsp chives, chopped

1 cup (250ml) radicchio, julienned

2 tbsp green onion, chopped

Method :

To make the sandwich, rinse the tuna in the can several times with cold water, draining well. Place the tuna in a bowl and mash it into small pieces using a fork. Add onion, celery and oil; mix well. Spread toasted bread with kefir then assemble the sandwich, layering lettuce, avocado slices and tuna mixture.

To prepare the salad, blanch wax beans in salted boiling water for 5 minutes (not any longer). Drain and rinse in cold water; drain well then cut the beans into half. Toss all salad ingredients together in a bowl and serve with the tuna sandwich.
