all-purpose flour


medium lamb shanks

salad oil

chopped onion

clove garlic, minced


snipped parsley


curry powder

dash cayenne

Method :
  1. Combine flour, 3/4 tsp salt, and dash pepper.

  2. Coat lambs shanks on all sides in seasoned flour.

  3. Brown evenly in hot oil.

  4. Stir in onion and garlic; cook till tender but not brown.

  5. Add remaining ingredients; cook, covered, over low heat till tender, about 75 minutes.

  6. Turn meat once or twice during cooking.

  7. Skim excess fat from sauce before serving with meat.

Makes 2 servings
