Method :
Halve the kidneys and cut out the
white cores. Place the kidneys in a bowl, add
the lemon juice and set aside for 10 minutes. Heat the oil in a frying pan, add
the kidneys, garlic and pancetta and fry over a high heat, stir
constantly, 3-4 minutes until browned. Add the sherry, simmer 3-4 minutes
until the sherry is reduced and the kidneys cooked through. Sprinkle over the parsley, season
to taste with salt and pepper. Ready to serve
