Kidneys Cooked with Sherry Recipes

Ingredients :

8 lambs' kidneys

4 tbsp lemon juice

2 tbsp olive oil

1 garlic clove, crushed

125g pancetta, chopped

50ml oz dry sherry

2 tbsp chopped parsley

salt and pepper

Method :

Halve the kidneys and cut out the white cores. Place the kidneys in a bowl, add the lemon juice and set aside for 10 minutes. Heat the oil in a frying pan, add the kidneys, garlic and pancetta and fry over a high heat, stir constantly, 3-4 minutes until browned. Add the sherry, simmer 3-4 minutes until the sherry is reduced and the kidneys cooked through. Sprinkle over the parsley, season to taste with salt and pepper. Ready to serve
