Lamb and Raisin Meatballs Recipes

Ingredients :

275 ml

lean lamb, minced

small onion, finely chopped

lightly beaten

seedless raisins, finely chopped

chopped parsley

ground allspice

ground cinnamon

plain low fat yoghurt

parsley sprigs, to garnish

salt and pepper

Method :
  1. Mix all the ingredients, except the yoghurt and parsley sprigs, to make a smooth, moist paste - a food processor does it in moments.

  2. Flour your hands and form the mixture into small balls, a little larger than walnuts.

  3. Arrange them in a shallow pan, pour on the yoghurt and simmer for 15 minutes, shaking the pan often.

  4. Garnish with the parsley sprigs.

  5. Serve with jacket potatoes or rice.
