Stir-Fried Lamb with Apples and Vegetables Recipes

Ingredients :

250g Australian lean shoulder of lamb, cut in thin strips

1 tbsp chopped garlic

1 tsp chopped young ginger

Marinade for lamb:

1/4 tsp salt and sugar

1/2 tsp sesame oil

1 tsp Chinese cooking wine (optional)

1/2 tsp cornflour

2 tbsp water

1 tbsp oil

2 green apples

60g green pepper

60g red pepper

60g celery

3 water chestnuts

3 dried mushrooms, soaked

4 tbsp oil

1/2 tsp sesame oil

dash of pepper

1 tsp cornflour

3 tbsp water

Method :

Marinade the lamb and leave for 30 minutes. Slice all the vegetables into thin strips. Heat 2 tbsp oil and sauté half of the garlic and ginger till fragrant. Add lamb and stir fry for about 2 minutes till meat has changed color. Dish up and put aside. Heat 2 tbsp oil and sauté the remaining garlic and ginger till fragrant. Add the peppers, celery, mushrooms, water chestnuts and mix well. Season with sesame oil and pepper; thicken with cornflour and water. Add lamb and stir fry for about 1 minute. Add apples and mix well and dish up. Serve hot.
