Method :
Cut chicken
fillets into 1.5cm strips. To make marinade: combine ingredients in a
small bowl. Add chicken strips and marinate, covered with plastic wrap,
in refrigerator several hours or overnight, turning occasionally. Drain
chicken and reserve marinade. Heat olive oil in a medium pan; add
chicken. Cook over medium-high heat 5-10 minutes or until lightly
browned and tender; stir in reserved marinade. Serve chicken strips with
Hummus, rolled in pita bread.
