Place yeast,
water and sugar in a medium bowl. Allow to stand in a warm place for 5
minutes or until frothy. Place flour, yeast mixture and oil in a food
processor and process for 30 seconds or until mixture forms a ball. If
not using a food processor place ingredients in a bowl and mix with a
wooden spoon or with your hand until mixture forms a smooth dough. Turn
dough onto a well-floured board and knead until smooth and elastic to
touch. Place dough in a well-oiled bowl, cover with plastic wrap, then a
clean tea-towel and stand in a warm place for 20 minutes or until dough
has almost doubled in size.
Punch air
from dough, divide into 12 equal portions. Roll each portion into a 5mm
thick round. Place on greased baking trays and brush well with water.
Stand and allow to rise for a further 20 minutes. Preheat oven to 250C.
If dough rounds have dried, brush again with water. Bake for 4-5
minutes. The pita bread should be soft and pale in color, slightly
swollen and hollow inside. Eat warm with kebabs or falafel or cool on
wire racks and serve with salad.
