Method :
Preheat oven to
160C. Brush a 32 x 28cm biscuit tray with melted butter or oil, line base
with paper; grease paper. Beat butter and sugar in small mixing bowl until
light and creamy. Transfer mixture to a large bowl. Using a metal spoon,
fold in orange flower water and flour until well combined. Press with your
hands until mixture comes together to make a stiff dough. To make filling:
Combine all ingredients in a medium bowl and mix together well. Roll
heaped tablespoons of dough into balls. Press a hollow in the centre with
your thumb. Place 1 tsp of prepared filling into each hollow. Place on
prepared trays, flatten slightly, without folding dough over filling, and
bake 15-20 minutes or until biscuits are golden. Cool on a wire rack and
serve after dinner with coffee or as an accompaniment to ice-cream.
Note: Orange
flower water is a fragrant liquid used to flavor syrups and pastries all
through the Middles East. It is available from health food shops and Greek
and Lebanese grocers.
