Cilantro Salsa Recipes

Ingredients :

3 cups chopped, very ripe tomatoes

1 medium Vidalia onion, finely chopped

1 large Anaheim chile, finely chopped

1/2 cup finely chopped cilantro

1 tbsp ground cumin

2 tbsp lime juice

Method :

Combine all ingredients and refrigerate to allow flavors to blend. Let warm to room temperature before serving, and serve with whole-grain chips and crudités.

Serves 6-8

With the pungent flavors of cilantro and cumin, this version of a traditional pico de gallo is a tasty start to any Mexican food meal, or as a party dish all by itself.
