Coriander Duck (Ark Siew) Cooking Recipes

Ingredients :

duck

coriander, dry fried and finely ground

sugar

tamarind juice

shallots

black peppercorns

salt to taste

oil for deep frying

Method :
  1. Clean the duck, rub salt all over and cut into big pieces.
  2. Heat oil and fry the duck pieces until brown on both sides.
  3. Remove the duck from the oil and drain.
  4. Place in a pot.
  5. Mix the ingredients thoroughly and pour over the duck.
  6. Cook over low heat until the gravy is almost dry and the duck is cooked through.

Serves 4 - 6
