Fresh Head Curry Cooking Recipes

Ingredients :

fish head


cloves garlic

piece turmeric

bunch kesum leaves (sweet basil)

piece shrimp paste

dried chilies

stalks lemon grass

tamarind pulp, mixed with 1 bowl of water and strained



salt to salt

Method :
  1. Heat oil in an earthen pot and fry all the ground ingredients for 10 minutes.
  2. Pour the tamarind juice in.
  3. Add in the fish head and salt and bring to the boil.
  4. Simmer.
  5. Add in the tomatoes and kesum leaves.
  6. Bring to boil again and remove.

Serves 4 - 6

Note :

Food was traditionally cooked in earthen pots. The food is alleged to taste better as the natural juices of the food are sealed in.
