Kidney Soup Cooking Recipes

cloves garlic, pounded

piece ginger, shredded finely

stalks spring onion, cut into 2 cm lengths

stalks Chinese celery, cut into 2 cm lengths

soy bean paste, pounded

brandy

Method :
  1. Prepare kidney.
  2. Force running water through kidney and cut in half length wise.
  3. Remove and discard center membrane, slit the outside surface and cut each half into 4.
  4. Soak in water for 15 minutes.
  5. Discard water and pour boiling water over the kidneys.
  6. Soak for another 10 minutes and rinse thoroughly.
  7. Add brandy and knead for 5 minutes and then drain.
  8. Heat oil and stir fry garlic until fragrant and golden brown.
  9. Remove.
  10. Stir fry ginger and soy bean paste.
  11. Sprinkle a little water and stir fry minced pork until cooked.
  12. Add water and salt and bring to boil.
  13. Add liver and bring to boil again.
  14. To serve, place kidneys in a serving bowl, pour in boiling soup and garnish with spring onions, celery and fried garlic.
