Lime Pickles Recipes

Ingredients :

600 g

2 liters

1/2 cup

1/2 cup

11/2 cup

1 tbsp


large limes or lemons salted in a jar for 1 week


peanuts, blanched and pounded

cashew nuts, ground

corn oil

mustard seeds

sprigs curry leaves (optional)

salt and sugar to taste

Method :
  1. Put limes in a jar and cover with 1/2 of the vinegar.
  2. Keep aside for a week.
  3. Shake the jar occasionally so that the limes are well soaked with vinegar.
  4. Heat corn oil in a pan and fry the mustard seeds and ground peanuts.
  5. Lower the flame and fry until fragrant.
  6. Pour in the remaining vinegar and stir well.
  7. Add salt, sugar and curry leaves.
  8. Turn off heat and leave aside to cool completely.
  9. When the gravy has cooled, pour over the limes, close the jar tightly and allow the limes to soak in the mixture.
  10. The pickles will be ready in a week.
