Grind finely the onions, turmeric,
shrimp paste, candlenuts, galangal, lemon grass and dried chilies.
Cut cucumber into 4 cm lengths.
Soak in salt water for 30 minutes
and then squeeze out the water.
Cut the rest of the vegetables the
same size.
Wash well and dry.
Heat 1 cup oil in a pan and fry
the ground ingredients until fragrant, then add 3 tbsp sugar, salt,
1/2 tbsp salt and 2 tbsp vinegar.
Add in all the vegetables, mix
well and mix in the groundnuts.
Let the vegetables cook for a few
minutes then dish out.
Cool well before storing in air
tight jars.

Besides being used in cooking, fresh
turmeric is also used as a medicine. It is pounded, mixed with salt fish
and fried. It is then served with rice to a women in confinement.
