peanuts, roasted and pounded finely

dried chilies

brinjals

stalks lemon grass

piece galangal

turmeric

piece shrimp paste, toasted

candlenuts

Method :
  1. Grind finely the onions, turmeric, shrimp paste, candlenuts, galangal, lemon grass and dried chilies.
  2. Cut cucumber into 4 cm lengths.
  3. Soak in salt water for 30 minutes and then squeeze out the water.
  4. Cut the rest of the vegetables the same size.
  5. Wash well and dry.
  6. Heat 1 cup oil in a pan and fry the ground ingredients until fragrant, then add 3 tbsp sugar, salt, 1/2 tbsp salt and 2 tbsp vinegar.
  7. Add in all the vegetables, mix well and mix in the groundnuts.
  8. Let the vegetables cook for a few minutes then dish out.
  9. Cool well before storing in air tight jars.

Serves 6 - 8

Besides being used in cooking, fresh turmeric is also used as a medicine. It is pounded, mixed with salt fish and fried. It is then served with rice to a women in confinement.
