white fish flesh, cut into medium sized pieces

galangal

stalks lemon grass

fresh red chilies

ginger

galangal leaves

lime leaves

turmeric leaf

mint leaves

limes, juice extracted

salt and sugar to taste

Method :
  1. Put all the crushed ingredients into a pan and cover half the pan with water.

  2. Bring to the boil and simmer for 30 minutes.

  3. Add in salt and sugar and also the lime juice.

  4. Add the fish and cut leaves.

  5. Cook on low heat for a few minutes.

  6. Dish out and serve with plain boiled rice and Sambal Belacan.
