Yellow Glutinous Rice (Nasi Kunyit) Recipes

Ingredients :

glutinous rice, washed and drained

freshly ground turmeric

lemon juice

thick coconut milk

thin coconut milk

banana leaf

screw pine leaves, washed and knotted

boiling water

Method :
  1. Add in ground turmeric, lemon juice and water to a level 7.5 cm above the rice.
  2. Leave to soak overnight.
  3. Drain off the water just before cooking.
  4. Line the base of a steamer with banana leaf, pricking holes through the leaf where the steamer holes are to allow the steam through.
  5. Place the rice on the banana leaf with the screw pine leaves.
  6. Steam for 20 minutes over rapidly boiling water.
  7. Scoop the rice into a large bowl and pour in the thin coconut milk.
  8. Stir, then cover and steam for another 10 minutes.
  9. When rice is almost cooked, stir in the thick coconut milk.
  10. Continue steaming until the rice is cooked.
  11. Serve with chicken curry and a sambal of your choice.

Note :
