Meal in One Rice Salad Recipes

Ingredients :

375g cold, cooked brown rice

1 small green pepper, seeded and finely chopped

90g mushrooms, finely sliced

1 medium carrot, grated

90g bean shoots

185g corn kernels

125g cabbage, finely shredded

220ml low fat natural yoghurt

1 tbsp lemon juice

white pepper

Method :
  1. Combine the rice and all the vegetables.
  2. In a separate bowl, blend the yoghurt, lemon juice and pepper.
  3. Combine vegetables and dressing.
  4. Chill in the refrigerator for at least 1 hour before serving.

Serves 4 - 6
