Apple with Assorted Seafood and Cashewnuts Recipes

Ingredients :

2 green apples, peeled and diced

120g shelled shrimps, washed and drained

200g cuttlefish, cleaned and cut into pieces

4 crab fillets, diced

1/4 tsp salt

1/2 tsp cornflour

dash of pepper and sesame oil

100g snow peas, stringed

4 tbsp oil

1 tbsp chopped garlic and shallots

100g fried cashew nuts

Seasoning:

1/2 tsp sugar

dash of pepper

1/2 tsp sesame oil

1 tsp cornflour

3 tbsp water

a little salt to taste

Method :

Mix shrimps and cuttlefish with salt, cornflour, pepper and sesame oil. Leave to marinate for 10 minutes. Heat 1 tbsp oil and stir-fry snow peas for 1 minute. Add a little salt and sprinkle 1 tbsp water over. Mix well and dish up. Heat 3 tbsp oil, sauté chopped garlic and shallots till fragrant. Add shrimps, cuttlefish and mix well. Stir fry till the shrimps turn pink and add crab fillet and the seasoning sauce. Add snow peas and apples. Stir to mix well. Add half the cashew nuts, mix and dish up. Sprinkle the remaining cashew nuts on top. Serve hot.
