Calamari Rolls Recipes

Ingredients :

4 dried calamari

113 g minced pork

2 dried black mushrooms

1/2 tbsp minced water chestnut

75 g shrimps (shelled)

1 plant of Chinese parsley

Marinade :

2/3 tsp salt

2/3 tsp sugar

2/3 tsp light soy sauce

1 tsp caltrop starch

pinch of pepper

dash of sesame oil

Sauce :

boiling oil

light soy sauce

sesame oil

Method :
  1. Soak calamari until soft.
  2. Finely chop calamari tentacles.
  3. Cut calamari bodies into halves and mark crosses on surface.
  4. Cut the stalks from the caps of mushrooms.
  5. Soak until soft and finely chop.
  6. Wash and finely chop shrimps.
  7. To make filling, mix pork, mushrooms, squid tentacles, water chestnut and shrimps with marinade.
  8. Put some filling on each slice of squids.
  9. Roll and arrange on serving plate.
  10. Steam for 5 minutes.
  11. Remove and drain liquid from steaming calamaris.
  12. Add sauce and sprinkle with Chinese parsley.
  13. Serve.
