Crispy Giant Shrimps (Prawns) Recipes

Ingredients :

125g plain flour

1 tbsp oil

150ml beer or lager

2 egg whites

1 tbsp chopped parsley

16 cooked peeled giant Pacific shrimps

oil, deep frying

salt

Sauce:

8 tbsp Mayonnaise

2 garlic cloves, crushed

2 tbsp chopped thyme

1 tsp finely grated lemon rind

dash of Tabasco sauce

Method :
  1. Sift the flour and salt into a bowl, beat in the oil and beer.
  2. Whisk the egg whites until very stiff, fold them into the batter with the parsley.
  3. Drop in the prawns and coat well.
  4. Heat the oil to 350-375G or until a cube of bread browns in 30 seconds.
  5. Deep-fry the prawns in batches for 2-3 minutes until golden brown and crisp.
  6. Drain on kitchen paper and keep hot while frying the remainder.
  7. Mix all the sauce ingredients together, spoon into a bowl.
  8. Sprinkle the lemon rind on top.
  9. Ready to serve with hot shrimps (prawns).

Serves 4
