Fettuccine with Prawns and Peas Recipes

Ingredients :

cooked fettuccine, drained and kept warm

spring onion, chopped

cooked prawns, peeled and veins remoed

cooked green peas

snow peas (mangetout), blanched

 

egg yolks

white wine vinegar

fresh lemon juice

finely chopped ginger root

hot water

olive oil

sesame oil

cream

finely ground black pepper

Method :
  1. In bowl, combine fettuccine, spring onion, prawns and peas.
  2. Keep warm.
  3. To prepare sauce: Combine egg yolks, vinegar, lemon juice, ginger and seasoning in a food processor.
  4. Process 30 seconds.
  5. Add hot water and oils in thin stream.
  6. Add cream in thin stream.
  7. Process until combined.
  8. Toss sauce through fettuccine.
  9. Serve hot, garnished with snow peas (mange tout).

Serves 4
