chili paste or 1 red chili, sliced
spray fresh coriander leaves, shredded

In a flat frying pan, heat 2
tablespoons vegetable fat to a fairly high temperature.
Mix the flour and water to a thin
liquid and pour into the pan.
Allow to brown lightly.
Crack the eggs into the batter and
spread them round, whipping them lightly.
Turn up the heat and fry till brown on

When the omelette is golden, shred it
into large pieces and add the oysters.
Add the sauce and chili and stir well.
Serve garnished with coriander leaves
