whole coconut, grated

chili

cloves garlic

shallots

piece fresh turmeric (or 1/2 teaspoon powdered turmeric)

turmeric leaf

piece ginger

stalk lemon grass

Method :

Blended together the chilies, shallots, garlic, fresh turmeric, lemon grass, ginger and turmeric leaf. Meanwhile, add salt and seasoning into the grated coconut. Clean the pomfret and baste it. Put it aside. Clean one banana leaf. If you cannot find banana leaves, use aluminum foil. Sprinkle some coconut mixture on the leaf and put the fish on it. Stuff half of the mixture into the fish. Spread the rest of the mixture on the fish. Wrap the fish in the banana leaf and grill it over a charcoal fire.
