Lobster Thermidor Recipes

Ingredients :

4 small cooked lobsters

1 tbsp butter

1/2 tsp finely minced onion

2 tbsp flour

1.5 cups milk, scalded

1/4 tsp salt

dash white pepper

sprig parsley

pinch nutmeg

1/3 cup heavy cream

2 tsp lemon juice

1 tbsp dry sherry

1 tsp dry mustard

pinch cayenne

dash Worcestershire sauce

salt and pepper

1/4 cup grated Parmesan cheese

paprika

1/4 cup soft butter

Method :

Split lobsters in halves lengthwise. Remove claws. Lift met out of bodies and claws and cut in large pieces. Keep body shells whole. Melt butter in saucepan. Add onion and cook gently 3 minutes. Sprinkle in flour and cook and stir until golden. Remove from heat and stir in hot milk. Stir in 1/4 tsp salt, white pepper, parsley and nutmeg. Return to moderate heat and cook until mixture comes to a boil, stirring constantly. Turn heat to low and continue cooking 20 minutes, stirring often. Strain and return to saucepan.

Stir in heavy cream, lemon juice, sherry, mustard, cayenne and Worcestershire sauce. Taste and season with salt and pepper. Add lobster meat and heat. Set lobster shells in shallow pan. Pile lobster mixture into them. Sprinkle evenly with Parmesan cheese, dust with paprika and dot with butter. Slip under hot broiler and broil until golden brown. Serve immediately.

Note : This same recipe can be used with 2 large or 3 medium size lobsters.
