Moules Mariniere Recipes

Ingredients :

60g butter

4 shallots, finely chopped

1 garlic clove, crushed

350ml dry white wine

1 bouquet garni

1.5kg mussels, scrubbed and debearded

2 tbsp chopped parsley

salt and pepper

French bread, to serve

Method :
  1. Melt the butter, add shallots, garlic, fry over low heat, stir until soft.
  2. Stir in wine, add bouquet garni, bring to boil, 2 minutes, season with salt and pepper, add mussels.
  3. Cover, cook over high heat, shake the pan from time to time, until mussel shells open.
  4. Remove from pan, discard mussels that can't open.
  5. Boil the liquid rapidly until reduced by half, return the mussels to pan and heat, shake the pan continuously for 1 minute.
  6. Sprinkle with parsley, shake the pan.
  7. Pile the mussels in a warmed deep serving dish, pour the liquid over the top.
  8. Ready to serve with crusty French bread.
