Mussels and Snow Peas Cooking Recipes

Ingredients :

1kg

1 cup

250g

10-12

4 slices

1/2 cup

mussels

water

snow peas (mange tout), trimmed

fresh lychees, peeled

ginger root, finely sliced

Tomato dressing

Method :
  1. Scrub mussels and remove beard.
  2. Discard any mussels with broken or open shells.
  3. Bring water to the boil, add mussels.
  4. Cover and steam for 3-5 minutes or until they open.
  5. Remove mussels from shells, place in a bowl, cover and set aside.
  6. Cover snow peas with boiling water.
  7. Leave for 1 minute, drain and cool under cold running water.
  8. Add snow peas to mussels.
  9. Halve lychees, removing stones.
  10. Mix with mussels, sprinkle over ginger.
  11. Pour dressing over mussel mixture.
  12. Toss to coat all ingredients.
  13. Chill, covered, for 30 minutes.
  14. Drain off any excess dressing.
  15. Serve on individual plates.
