Mussels with Bacon and Tomato Vinaigrette Recipes

Ingredients :

1kg mussels, scrubbed and debearded

2 shallots, finely chopped

6 tbsp dry white wine

6 smoked streaky bacon rashers, rinded

50g Parmesan cheese

basil or parsley sprigs, to garnish (optional)

Tomato vinaigrette:

6 tbsp tomato juice

4 tbsp extra virgin olive oil

2 tbsp red wine vinegar

1/2 garlic clove, crushed

1/4 tsp caster sugar

1 tbsp finely shredded basil

salt and pepper

Method :
  1. Prepare the vinaigrette, whisk all the ingredients in a bowl, close the lid tightly and shake until combined.
  2. Place the mussels in large saucepan with shallots, white wine, cover, cook over high heat 3-4 minutes, until the shells are opened.
  3. Drain, discard cooking liquid and unopened mussels.
  4. Transfer the mussels and shallots to a serving bowl, cool.
  5. Cook the bacon under a hot grill until crisp, drain on kitchen paper, crumble or snip into small pieces.
  6. Pour the tomato vinaigrette over the mussel mixture, toss lightly, scatter the bacon over the top.
  7. Adjust the seasoning to taste.
  8. Shave the parmesan over the top, serve the salad scattered with basil or parsley, if preferred.
