butter or margarine

onion, peeled and chopped

clove garlic, crushed

tomatoes, peeled, seeded and chopped

bouquet garni

lemon juice

finely chopped parsley

grated cheese

freshly ground black pepper

Method :

Scrub mussels thoroughly. Remove beards. Soak in cold water for 20 minutes. Heat butter in pan. Gently cook onion and garlic until tender. Add tomatoes, bouquet garni, lemon juice and seasoning. Cook for 5 minutes. Open mussels wit a sharp knife, starting at hinge and working round to join. Place opened mussels on a flat ovenproof dish. Cover with tomato mixture. Sprinkle with parsley and cheese. Bake in a moderate oven 180C/350F for 8 minutes. Serve immediately with crusty bread to soak up the sauce.

Serves 2

A 'bouquet garni' is a flavoring comprising celery studded with a few peppercorns, parsley and a bay leaf tied together with string. Always remove before serving. A commercial variety is also available in the herb and spice section of your supermarket.
