Scallop and Spinach Quiche Recipes

Ingredients :

plain flour

butter or margarine, cubed

egg yolk

iced water

squeeze lemon juice

 

small onion, finely chopped

butter or margarine

shredded spinach

eggs

cream

milk

scallops, cleaned

gruyere cheese, sliced

freshly ground black pepper

pinch grated nutmeg

Method :
  1. To prepare pastry: Sift flour into a bowl.
  2. Add butter, run info flour, using fingertips, until mixture resembles breadcrumbs.
  3. Combine egg yolk, lemon juice and half the water.
  4. Sprinkle over flour, stir to form a soft, pliable dough.
  5. Add extra water if necessary.
  6. Knead lightly.
  7. Wrap in plastic wrap, rest in the refrigerator for 30 minutes.
  8. Roll out pastry to line a 28cm flan tin.
  9. To prepare filling: Cook onion in butter until transparent.
  10. Add spinach, cook for 3 minutes, cool slightly.
  11. Place spinach mixture in a bowl with eggs, cream, milk and seasoning.
  12. Beat well until combined.
  13. Pour spinach mixture into pastry shell.
  14. Place scallops and cheese on top.
  15. Bake in a moderately hot oven 190C (375F) for 35-40 minutes or until set.
  16. Serve with a tossed salad.
