Seafood Pie Recipes

Ingredients :

650g (1 lb 5 oz) Desiree potatoes

1/2 cup (125ml / 4 fl oz) white wine

300ml (10 fl oz) fish stock or water

750g (1.5lb) boneless white fish, cut into 5cm (2 inch) pieces

50g (1.75 oz) butter

1/3 cup (40g / 1.25 oz) plain flour

1/4 cup (60ml / 2 fl oz) cream

3 gherkins, chopped

1/4 cup (15g / 1/2 oz) chopped fresh parsley

12 raw shrimps, peeled and deveined

125g (4 oz) scallops, cleaned

1/2 cup (60g / 2 oz) grated Cheddar

Method :

Cut the potatoes in half, leaving the skin on. Cook in a pan of boiling salted water for 15 minutes, or until tender. Drain and cool. Meanwhile, heat the wine and fish stock in a pan. Add the fish and simmer for 5 minutes, or until just cooked. Remove the fish and reserve the liquid. Melt the butter in a pan, add the flour and cook for 1 minute. Remove from the heat and gradually add the reserved cooking liquid. Whisk until smooth. Cook over low heat for 2-3 minutes. Stir in the cream, gherkins, parsley and seafood. Preheat the oven to moderate 180C (350F/Gas 4). Grease a 2 liter ovenproof dish and spoon in the fish mixture. Peel and grate the potato, season with salt and pepper, and mix well. Spread over the pie and sprinkle with the cheese. Bake for 40 minutes, or until golden brown.
