Shrimp Pears with Walnut Cream Sauce Recipes

Ingredients :

lettuce leaves, washed, drained, patted dry

8 canned pear halves, well-drained

8 oz peeled prawns, thawed if frozen

1 carton soured cream

1 tbsp milk

1 oz walnuts, very finely chopped

8 unpeeled shrimps

salt and pepper

Method :
  1. Line 4 small plates with lettuce leaves.
  2. Arrange 2 pear halves, cut side uppermost, on top of each.
  3. Fill hollows with prawns.
  4. For sauce, beat soured cream with milk.
  5. Stir in walnuts, season to taste with salt and pepper.
  6. Spoon over shrimps, decorate with a whole shrimp or slice of cucumber.
  7. First, slit from centre to outside edge and shaped into a twist.

Serves 4

A variation on the shrimp cocktail theme. Unusual and very much the thing for a small dinner party.
