Steamed Big Fish With Satay Paste Recipes

Ingredients :

1 big fish's tail (about 450 g)

1 tbsp satay puree

1/2 tsp shredded ginger

1/2 tsp grated shallot

1/2 tsp shredded red chili

Sauce :

boiling shallot oil (made by stir frying 1/2 tsp of grated shallot with 1 tbsp of boiling oil over low heat)

sweet light soy sauce

Marinade :

1/2 tsp salt

1/2 tsp sugar

1/2 tsp caltrop starch

pinch of pepper

Method :
  1. Scale and wash fish.
  2. Wipe dry and marinate for 10 minutes.
  3. Mix ginger, shallot, red chili and satay paste together.
  4. Pour onto fish.
  5. Steam over high heat for 8 minutes.
  6. Drain liquid from steaming.
  7. Sprinkle with shredded spring onion.
  8. Add sauce.
  9. Serve hot.
