Sweet and Sour Pranws Recipes

For the sauce:
1/4 cup

medium sized prawns
cold water
fresh ginger, grated
egg whites
corn flour
stalks spring onion
small green cucumber, sliced
small onion, chopped
large tomato, sliced
salt
oil for deep frying
white vinegar
orange juice
sugar
arrowroot
cold water
pinch red coloring |
Method :

Shell and deveined the prawns, leaving
only the last segment of the shell and tail intact.

Wash and soak them in cold water with
half teaspoon salt for 20 minutes.

Drain and then blot them on kitchen
paper.

Place them in a dry bowl and sprinkle
with another half teaspoonful of salt.

Sprinkle the ginger over and mix well.

Add the egg whites and corn flour and
stir thoroughly ensuring that the prawns are thoroughly coated with
mixture.

Cover and refrigerate for 4 hours or
longer, overnight would be ideal.
To prepare the Sauce :

Combine the white vinegar, orange
juice, salt and coloring.

Bring to the boil, remove from heat
and stir in the arrowroot mixed with cold water.

Return to heat and stir continuously
until the sauce boils and thickens.
To fry the prawns :
-
Heat enough oil for deep frying.

When the oil is hot, put in half of the
prawns and fry for just under a minute, be careful not to overcook them
or they will lose their succulence and become leathery.

Lift out with a wire spoon and drain on
grease proof paper.

Heat the oil and fry the remaining prawns.

After draining, place the prawns in a
serving dish and pour the sauce over.

Garnish with spring onion, cucumber,
onions, and tomato.
