Swordfish Steaks in White Wine and Tomatoes Recipes

Ingredients :

2 tbsp olive oil

1 red onion, chopped

1 garlic clove, chopped

2 celery sticks, chopped

2 bay leaves

4 tomatoes, skinned and chopped

1 tsp sugar

1/2 pint white wine

2 tbsp chopped oregano

6 oz swordfish steaks

salt and pepper

Method :
  1. Heat the oil in a pan.
  2. Add the onion, garlic and celery and fry over a low heat for 5 minutes.
  3. Add the bay leaves, tomatoes, sugar, white wine and oregano, season to taste with salt and pepper, mix well and bring to a gentle simmer.
  4. Add the swordfish steaks and cook for 5 minutes, then turn them over and cook on the other side for a further 5 minutes.
  5. This dish can be served immediately, or in hot weather it is very good served at room temperature.
