cloves garlic
scallions (optional)
extra-virgin olive oil
butter
dried red chili flakes
medium to large shrimp, fresh or frozen, shelled and deveined
lemon
Mince the garlic or put it through a garlic press.
Coarsely chop the scallions if using and set aside.
In a large skillet, heat the olive oil and butter over medium heat.
As the foam of the butter subsides, add the garlic and red chili flakes, and sauté for about 1 minute until the garlic smells pungent.
Be very careful not to burn it, or you'll ruin the whole dish.
Turn up the heat slightly and add the shrimp and chopped scallions if desired.
Sauté for 2-3 minutes until the shrimp is opaque and cooked through.
Squeeze the juice of 1/2 lemon over the whole dish and serve immediately.
