Fragrant Stock Recipes

Ingredients :

450g onions, coarsely chopped

10 garlic cloves, chopped

5cm cube of fresh ginger, chopped

2-3 large carrots, chopped

2 tsp salt

whole spices:

10 cloves

10 green cardamoms

6 pieces of cassia bark

6 bay leaves

Method :

Bring 1.2 liters / 2 pints water to the boil, then add all the ingredients. Simmer for 1 hour with the lid on, by which time the stock should have reduced by half. Strain and discard the solids.

If you like, add 225g meat trimmings and bones before you boil the stock.
