Summer Salmon Roast Recipes

Ingredients :

1/2 tbsp olive oil or flavored olive oil

1/2 cup chopped fresh chives, parsley, or other fresh herb

one 1-pound salmon fillet, skin on

2 tbsp chopped fresh basil

juice of 1 lemon

14 cherry tomatoes; or 2 medium-size ripe tomatoes, cut into cubes

1 tbsp chopped fresh dill

1.5 tbsp butter

1/2 cup chopped walnuts, almonds, or pine nuts

salt and freshly ground black pepper

Method :

Preheat oven to 400 degrees. Grease the bottom of a medium-size roasting pan or ovenproof skillet with the oil. Place the chives in the pan and top with the fish. Sprinkle with the basil and lemon juice. Surround the fish with the tomatoes and dill.

In a small skillet, heat 1 tbsp of the butter over moderate heat. Add the nuts and cook, stirring, until golden brown, 3-4 minutes. Season with salt and pepper. Sprinkle the nuts over the fish. Top the nuts with the remaining 1/2 tbsp butter, cut into small cubes. Roast the fish until opaque in the center, 10-12 minutes, depending on the thickness of the fish.
