Using a pestle and mortar or small
blender, pound or mix together coriander, peppercorns, garlic, lime
juice and fish sauce; set aside. Using the point of a sharp knife,
cut slashes in chicken. Spread spice mixture over chicken. Cover and set aside in a cool place
for 2-3 hours, turning occasionally. Preheat grill. Grill chicken, basting and turning
occasionally, for about 10 minutes until cooked through and golden. Serve with wedges of lime and
garnish with spring onion brushes.
