Coriander Fish and Garlic Recipes

Ingredients :






3 tablespoons

1 teaspoon




coriander roots, chopped

large cloves garlic, chopped

black peppercorns, crushed

fish fillets, such as trout or plaice

pieces banana leaf (optional)

lime juice

crushed palm sugar

spring onion, finely chopped

small fresh green chili, seeded and thinly sliced

small fresh red chili, seeded and thinly sliced

chili flowers, to garnish

Method :
  1. Using a pestle and mortar or small blender, briefly mix together coriander roots, garlic and peppercorns.
  2. Spread evenly over inside of fish fillets; eat aside for 30 minutes.
  3. Wrap fish in banana leaves or pieces of aluminum foil, securing leaf with wooden cocktail stick (toothpick), or folding edges of foil tightly together.
  4. Grill for about 8 minutes.
  5. Meanwhile, in a bowl, stir together lime juice and sugar, then stir in spring onion and chilies.
  6. Serve with fish.
  7. Garnish with chili flowers.
