Mixed Vegetables and Pork Recipes

Ingredients :

lean pork, finely chopped

vegetable oil

cloves garlic, finely chopped

prepared mixed vegetables, such as mange tout, broccoli florets, red pepper and courgettes

fish sauce

crushed palm sugar

spring onions, finely chopped

freshly ground black pepper

Method :

In a bowl, mix together pork and plenty of black pepper. Set aside for 30 minutes. In a wok or frying pan, heat oil, add garlic and cook, stirring occasionally, for 2-3 minutes, then stir in pork. Stir briefly until pork changes color. Stir in mixed vegetables, then fish sauce, sugar and 115 ml water. Stir for 3-4 minutes until mange tout are bright green and vegetables still crisp. Stir in spring onions. Heat through and serve.
