prepared mixed vegetables, such as mange tout, broccoli
florets, red pepper and courgettes
fish sauce
crushed palm sugar
spring onions, finely chopped
freshly ground black pepper
Method :
In a bowl, mix together pork and
plenty of black pepper. Set aside for 30 minutes. In a wok or frying pan, heat oil,
add garlic and cook, stirring occasionally, for 2-3 minutes, then
stir in pork. Stir briefly until pork changes
color. Stir in mixed vegetables, then fish
sauce, sugar and 115 ml water. Stir for 3-4 minutes until mange
tout are bright green and vegetables still crisp. Stir in spring onions. Heat through and serve.
