Prawns and Cucumber Curry Recipes

Ingredients :

4 tablespoons

3-4 tablespoons

225 g

20 cm

 

300 ml

2 tablespoons

1 teaspoon

coconut cream

Red Curry Paste

raw large peeled prawns

length cucumber, halved lengthways, seeded and cut into 2 cm pieces

 

coconut milk

tamarind water

crushed palm sugar

coriander leaves, to garnish

Method :
  1. In a wok, heat coconut cream, stirring, until it boils, thickens and oil begins to form.
  2. Add curry paste.
  3. Stir in prawns to coat, then stir in cucumber.
  4. Add coconut milk, tamarind water and sugar.
  5. Cook gently for about 3-4 minutes until prawns are just cooked through.
  6. Transfer to warmed serving dish and garnish with coriander.

Serves 3
