Method :
- In a wok, heat coconut cream, stirring, until it boils, thickens
and oil begins to form.
- Add curry paste.
- Stir in prawns to coat, then stir in cucumber.
- Add coconut milk, tamarind water and sugar.
- Cook gently for about 3-4 minutes until prawns are just cooked
through.
- Transfer to warmed serving dish and garnish with coriander.
