Bamboo Shoots In Coconut Milk Recipes

Ingredients :

600 g


2 stalks

1 cup

2 cups


3 cm

preserved bamboo shoots

slice of dried fish

lemon grass

thick coconut milk

thin coconut milk

red chilies

fresh turmeric

Method :
  1. Clean the bamboo shoot and drain.
  2. Grind finely the chilies and turmeric.
  3. Put in a pan together with the bamboo shoot and dried fish.
  4. Put in crushed lemon grass and salt to taste.
  5. Add the thin coconut milk to the pan and cook mixture over a medium flame.
  6. Stir continuously until the gravy thickens and add in the thick milk.
  7. Serve hot with plain boiled rice.

Serves 6 - 8

If you prefer the gravy to be mild you can reduce the amount of chilies. Deseeding the chilies will also reduce the hotness.
