Barley and Beans Recipes

Ingredients :

175 g

40 g

5 ml



30 ml

dried black eyed beans - or other kidney (beans - soaked and drained)

barley, soaked and drained

vegetable oil

large onion, chopped

clove garlic, crushed

chopped parsley

salt and ground black pepper

Method :
  1. In separate pans, cook the beans and the barley for about 1 hour, or until tender.

  2. Drain thoroughly.

  3. Meanwhile, heat the oil in a small pan, add the onion and garlic and cook over a low heat for 10 minutes.

  4. Increase the heat and fry, stirring occasionally, until the onions turn golden brown.

  5. Mix together the beans, barley and onion.

  6. Stir in the parsley, reserving a little for garnish.

  7. Season with salt and pepper.

  8. Turn into a heated serving dish and garnish with the reserved parsley.

Serving Suggestion :

Whole meal poppadoms or chappatis.

Serves 4
