dried black eyed beans - or other kidney
(beans - soaked and drained)
barley, soaked and drained
vegetable oil
large onion, chopped
clove garlic, crushed
chopped parsley
salt and ground black pepper |
Method :

In separate pans, cook the beans
and the barley for about 1 hour, or until tender.

Drain thoroughly.

Meanwhile, heat the oil in a small
pan, add the onion and garlic and cook over a low heat for 10
minutes.

Increase the heat and fry, stirring
occasionally, until the onions turn golden brown.

Mix together the beans, barley and
onion.

Stir in the parsley, reserving a
little for garnish.

Season with salt and pepper.

Turn into a heated serving dish and
garnish with the reserved parsley.
Serving Suggestion :
Whole meal poppadoms or chappatis.
